Just off the Champs-Elysées, Four Seasons Hotel George V, Paris is superbly located in the heart of the most fashionable quarter of Paris. Fronting on Avenue George V, it is ideally situated near the business district and major tourist attractions.

The 244 rooms Hotel includes 59 suites. Classic French furnishings and Parisian style create an elegant residential atmosphere. The hotel’s5 Michelin starred restaurants serve refined cuisine in an elegant and warm atmosphere.

We are looking for our Parisian property for an experienced and qualified Responsable Hygiène Restauration (M/F).

The candidate must hold the required authorization to work in a European country

A fluent level of French is required.

Position based in Paris.

Preferred Qualifications and Skills

We are looking for individuals with exceptional interpersonal, organization, and communications skills.Someone who is able to successfully multi-task in a fast-pasted environment, is proactive, creative, and enjoys working in a team environment.

Essential Functions

The Hygiene Manager manages the supervision of the various points relating to hygiene standards within the hotel and more particularly within all the Services of the Catering Department.

  • Understand and master all hygiene rules
  • Organize the control of the activities of the different services of the Food and Beverage Department to ensure the application of hygiene standards and good practices established by the State, Four Seasons and internally
  • Supervise and implement monitoring procedures
  • Ensure regulatory monitoring of hygiene standards
  • Design, follow and update the sanitary control plan as well as a calendar of activities related to hygiene and food safety
  • Carry out the necessary follow-ups and controls in all catering departments to ensure that procedures are properly implemented (daily review of kitchens and sales outlets, expiration dates, storage and documentation of food samples)
  • Record the various control follow-ups and verify the updating of the databases in place
  • Control the cleanliness of the points of sale and the various offices. Ensure that sanitation standards are met as well as the cleanliness of production facilities from the receipt of goods to the serving of the product.
  • Control the supply of cleaning products and materials
  • Prepare and conduct health and safety audits
  • Lead the increase in hygiene skills of the various departments
  • Coordinate the intervention of external inspection bodies
  • Ensure that the departmental training program, including operational procedures for food safety and hygiene, is established by each department head and followed for all new employees in collaboration with the training and development manager.
  • Conduct regular meetings and training on hygiene and safety, incident analysis – sensitivity to CFTIs (Collective Foodborne Illnesses)
  • Report necessary information to the relevant Directorates / Managers, propose improvements and evolutions within the departments
  • Maintain relations with external (administrations, suppliers, etc.) and internal (occupational physician, CCSCT, etc.) stakeholders
  • Assist in verifying technical compliance in the maintenance and production areas (kitchens). Coordinate preventive maintenance of production equipment and pest control documentation.
  • Selects suppliers, subcontractors and service providers and negotiates Contracts with the help of the purchasing department
  • Provide technical support to the departments, regarding quality, maintenance, methods.
  • Budget management.
